Cooking with Deliciously Ella

Cooking is not my forte. I love to bake, but cooking is definitely the domain of Mr Cathrinskey (and my two year old, as you can see above!). I’m not very adventurous in the kitchen, and like to follow a recipe, unlike Mr C who can just throw all sorts together and create something amazing. For me, a cookbook needs to be as beautiful as it is simple, and Deliciously Ella succeeds on both accounts.

Since I had my daughter I have had several vitamin deficiences which have left me feeling tired and unwell a lot of the time, so I am keen to try new meals that will strengthen my body and replace what it has lost. I remember stumbling across Deliciously Ella last year, and liked what I saw. She radically changed her diet after suffering with a rarely diagnosed but life-altering condition, but without compromising on taste. Since her book has been released I kept meaning to pick up a copy and I finally got round to it.

It is a beautifully presented book, with tempting pictures throughout. With so much to choose from, it was hard to decide what to try first but after much deliberation I settled on a roasted squash, olive, avocado and rocket salad. It was very simple, despite being packed with flavour. Wonderfully easy for a midweek tea, or a weekend brunch. My toddler enjoyed it a lot too, which is a huge bonus! I’m sure we will be trying plenty more dishes from this lovely book.
